Chicken & Vegetable Stir-Fry

Ingredients (1 serving):

200 g (7 oz) chicken breast

1 tbsp olive oil

100 g broccoli

50 g carrots (sliced)

50 g bell pepper (sliced)

50 g zucchini

1 small onion, sliced

1 garlic clove, minced

2 tbsp soy sauce (low sodium if preferred)

Optional: 1 tsp sesame oil, fresh ginger, chili flakes

Preparation:

Cut the chicken breast into bite-sized pieces and marinate briefly with some soy sauce (about 10 minutes).

Heat olive oil in a large pan or wok.

Sear the chicken until fully cooked, then remove from the pan and set aside.

In the same pan, sauté onion, garlic, and optionally fresh ginger.

Add the remaining vegetables and stir-fry for 5–7 minutes until slightly tender but still crisp.

Return the chicken to the pan, add soy sauce and optional sesame oil, and stir-fry everything together for another 1–2 minutes.

Serve hot – optionally with rice or as a low-carb meal.
